Banana Loaf
This loaf requires very ripe bananas to ensure it is moist and has a cracked top due to the consistency of the mixture.
Ingredients
- 100g cooking margarine.
- 175g granulated sugar
- 2 large eggs
- 300g peeled weight bananas (roughly 2 medium to large bananas)
- 225g self-raising flour
- 1 level teaspoon of baking powder
- 2 tablespoons milk
Use a 900g (2 lb) loaf tin
Method
- Pre-heat oven 170°C, Gas 4.
- Lightly grease the loaf tin and line with non-stick baking parchment or use a loaf tin liner.
- Measure all the ingredients into a large mixing bowl and beat for about 2 to 3 minutes until the mixture is well blended.
- Spoon the mixture into the prepared tin and level the surface.
- Bake for approximately one hour, until well risen and golden brown.
A fine skewer inserted into the centre of the cake should come out clean.
Cooking special point -
It is best to look at the loaf after 45 minutes to check it is not getting too brown as ovens do vary in temperature. If the cake is getting too brown on top and the skewer is not clean, turn the temperature of the oven down to 140° Gas 2. - Leave the loaf to cool in the tin for 5 minutes, then turn the cake out.
Remove the lining paper and leave on a wire rack to cool completely.
